Summer Fun Cookies

These cookies remind me of all the fun summer brings: sandy days at the beach, lounging by the pool, drippy ice cream cones, scorching hot sidewalks, and plenty of sun. The Creamsicle and ice cream cone cookie cutters here are from a Williams-Sonoma Sun & Fun Cookie Cutter Boxed Set. The sun cutter is from a different set.

Creamsicle Cookie

The Creamsicle is actually my favorite. I love the retro orange and white. To get the white super bright, I used Wilton White White icing color. The orange is Americolor orange gel paste.

Creamsicle Cookie

The tan popsicle stick is a mix of Americolor ivory and gold. The steps for icing this cookie are as follows:

  1. Create popsicle stick by filling stick area with tan icing. I did not use an outline for this, just flooded.
  2. Next, pipe your orange outline (using PME tip 1.5) around the pop and slightly back from the cookie bite marks so that the white cream portion will be revealed.
  3. Immediately flood orange area.
  4. Pipe thicker than flood consistency white icing (using PME tip 2) right up next to the orange bite mark outline. Don’t worry if some of the white spills over the edge. We will fix this later.
  5. Pipe orange outline L-shape (using PME tip 1.5) at base to form the bottom of the Creamsicle bar. Fill orange outline base with white icing and use an actual popsicle stick to spread the white into crevices. If the orange and white are dragging or melting together, wait for a bit to let the orange set up before filling in the white.
  6. Go back up to where the bite marks are and smooth out the edge. Add a bit more white to the edge, if needed, and smooth.

Well, there you have it! More detail than you ever needed about decorating a Creamsicle cookie!

The sun cookie has detail drawn on with edible markers.

Ice cream cone cookies

Americolor electric blue, sky blue and turquoise are used for the blue ice cream cones.

Rounded Ice Cream Cone Cookies

Can you tell what’s different about these? I made a few rounded ice cream cones from another cutter. Also the center cone has more of a square crosshatch pattern than the other two. Always experimenting!
